Fall is a wonderful time to eat foods with pumpkin in it and it is very simple to create delicious dishes when using canned pumpkin. The organic variety is available in canned form making it especially healthy. Here are three simple recipes that will allow you to eat pumpkin for breakfast, lunch and dinner.
Breakfast: Pumpkin Muffins
To make tasty pumpkin muffins simply combine a can of pumpkin with a box of cake mix. I always use yellow cake, but others choose spice cake mix. After these two ingredients are mixed together well, follow the baking instructions on the cake mix box.
These muffins freeze well making them a quick and easy breakfast.
Lunch: Bean and Pumpkin Burrito
Mix re-fried beans together with a few scoops of pumpkin and spread into a flour tortilla. Then, top with cheese and wrap the tortilla. Microwave the burrito for about one to one and a half minutes, top with salsa and sour cream and enjoy.
Dinner: Pasta with Creamy Pumpkin Sauce
This dish can be made with your favorite pasta and cream sauce (could be a canned Alfredo sauce). Add a few tablespoons of pumpkin to a cream sauce and toss with warm pasta for a quick dinner that is sure to please your family.
