blueberry crumble
Blueberries are known as a superfood because of the antioxidants found in them. In addition to being a delicious snack on their own, they are wonderful to cook with. One of my favorite summer desserts is blueberry crisp. The following recipe is a simplified version of a homemade crisp because it calls for a boxed cake mix.
Blueberry Crisp
Ingredients
- 1 stick butter
- 3 cups of fresh blueberries (frozen can also be used)
- 1 (20 oz) can crushed pineapples in juice
- 1 cup of brown sugar, divided 1/2 and 1/2
- 1 box yellow cake mix
- 1/2 cup white sugar
- 2 cups chopped pecans (optional)
Instructions
- Pre-heat oven to 350 degrees F
- Lightly butter a 9X13 baking dish
- Melt the rest of the stick of butter
- Pour in pineapple
- Top with blueberries, do not mix
- Sprinkle 1/2 cup brown sugar over blueberries and pineapple
- Sprinkle 1/2 cup white sugar over blueberries and pineapple
- Top with cake mix, do not mix
- Drizzle butter over the ingredients
- Top with 1/2 cup brown sugar
- Top with 2 cups of chopped pecans (if desired)
- Bake at 350 for about 45 minutes to 1 hour (this will depend on your oven) until blueberries are bubbling and the toppings have become crisp
Blueberry crisp is best served warm with a scoop of vanilla ice cream on top.
