Peanut Butter Bites
When Highlights High Five Magazine arrives in our mailbox my 3 year old immediately likes to have it read to her cover to cover. Each month, the magazine features a simple recipe that you can make with your children. This month as we were reading and came to the recipe, my daughter asked if we could make it. We happened to have all of the ingredients on hand so we set out to make Peanut Butter Bites.
The ingredients for this snack are:
- 2 graham crackers
- ½ cup of creamy peanut butter
- ½ cup of powdered sugar
- 1 tablespoon of honey
- ¼ cup shelled sunflower seeds
- 2 tablespoons of raisins or dried cranberries
The first step is to crush the graham crackers. This can be accomplished by putting the crackers in a plastic zippered bag and crushing with a rolling pin or by hand. This was a fun step for my daughter who had never used a rolling pin before.
Once the crackers are crushed into small crumbs, pour them into a pie pan.
Next, mix together the peanut butter, powdered sugar and honey. Once these are combined well, add the sunflowers seeds (we left these out) and raisins or cranberries. We opted for the raisins since they are a little sweeter than the cranberries.
As soon as all ingredients are mixed well, roll the mixture into balls and roll the balls in the graham cracker crumbs to coat them. My daughter enjoyed rolling the balls in the graham cracker crumbs and nibbling some of the leftover crumbs.
Place these bite sized treats in the refrigerator for an hour to chill and then enjoy! This recipe makes 12-18 snack bites depending on how big you make the balls.
The protein and fiber in this snack provide nutrition, while kids love it because it is sweet and crunchy.
