Tropical Snack Mix
- 8 cups bite-size crispy corn cereal squares
- 2 cups dried pineapple chunks
- 2 cups dried banana slices
- 1 cup sweetened dried cranberries
- 1 cup sliced almonds
- ¼ cup butter melted
- ¼ cup sugar
- ¼ cup frozen pineapple juice concentrate
In a large microwave-safe bowl, toss together cereal, fruit and nuts. In a separate small bowl, mix remaining ingredients; drizzle over cereal mixture. Microwave, uncovered, on high setting for 5 minutes, stirring every 2 minutes. Spread on wax paper to dry. Store in an airtight container. Makes about 14 cups.
