January is National Soup Month. Celebrate with your family by making a delicious soup that your kids will love. Mac and Cheese is a favorite meal for kids and the addition of vegetables in this soup makes it a healthy variation on a childhood favorite.
Mac and Cheese Soup
Ingredients
- 1 32 ounce package reduced-sodium chicken broth
- 6 ounces small pasta shells
- 1 16 ounce bag frozen broccoli, cauliflower, and carrot blend
- 1 1/2 cups low-fat milk
- 2 tablespoons all-purpose flour
- 1 1/2 cups shredded cheddar cheese
Directions
- In a large saucepan, bring broth to a boil over high heat. Add pasta. Return to a boil. Reduce heat and let simmer, uncovered, for 5 minutes.
- Add vegetables and cook until pasta and vegetables are tender, about 5 minutes more.
- Combine milk and flour in a resealable container; shake well to combine.
- Stir milk and flour mixture into pasta mixture.
- Cook and stir until thickened and bubbly.
- 6. Gradually add the cheese. Stir until cheese melts.
